Choosing Millet Cookware

You probably noticed that millet can be cooked using variety of methods and cookware. Millet can be baked, fried, boiled, sautéed and roasted. It can be cooked in pots, skillets, pans, dutch ovens, and baking dishes. You also probably noticed that cooking methods also vary: from oven to top of the stove. In fact, some recipes call for both. While cookware from different materials can be used many chefs agree that CAST IRON cookware is the best for cooking millet.

Here are some reasons why:

1. They are ideal heat conductors and are capable to transfer heat evenly with no hot spots. They are also precise cooking tools: can be heated to the exact temperature and maintain this temperature in the same range for the long period of time.

2. Cast iron tools are very versatile, the same tools can be used on top of the stove and inside. If recipe calls for cooking in boiled water first (usually done on top of oven) and baking second (inside the oven) it all can be done in the same pot or skillet.

3. Well maintained cast iron cookware allows for non-oil cooking but may cost much less than Teflon and other non-stick cookware, which, in addition, usually requires other special cooking utensils designed to prevent damaging of cooking surface.

4. Many chefs in the world will swear that the meal can be cooked to perfection by ONLY using cast iron cookware.

 Cooking with cast iron tools can be tricky and may require some experience to avoid potential problems like sticking and burning the food. However, while roasting millet in cast iron skillet before cooking, usually doesn't give any problems. Millet grain doesn't stick cast iron surface but acquires this unique golden brown color and nutty flavor. Just keep slowly stirring the millet.

There are some ground rules while cooking in cast iron cookware.

1. The handlers are HOT. Be careful not to burn yourself.

2. For fat free cooking the case iron tools should be well "seasoned" .

3. Always preheat your cast iron frying pan before frying in it.
