Millet Soups

Cooking millet soup can be very interesting and at the same time very easy. Millet is very small grain so it usually easily cooked in large quantites of water. First you should decide what bowl to use. It is easy - any bowl you would use to cook regular soup will work. It takes about 30 minutes for millet to be ready. Depending on what other soup ingridiensts (like meat) you may decide to add millet later so it will not overcook.

But as with cooking other soups the area for experimentation with different ingridients and flavors is wide open. It is also can be a great idea for cooking soup with kids. Allow them to select and add the ingridients but remember that as with other cooking, there are many hot things arond. Keep you kids away from any hot object.

One of interesting techniques to add extra nutty smell is to fry dry millet in the pan. It will also add more golden yellow color to the soup.

Here is an interesting recipe for millet soup with rice:

Russin Soup with Millet (easy vegetarian recipe)
 

Millet (1 cup)
Vegetable oil (2 tbsp)
Onion (1)
Leek) (1 bunch)
Carrots (2)
Potato (1)
Thyme (1 branch)
 Potato (1)
Thyme (1 branch)
Vegetable stock (1 qt)
Salt and ground pepper

Cooking Instructions

1. Chop onion, celery, carrots and leek.
2. In soup pot add oil and chopped vegetables, cook for 5 minutes
3. Add water, bring to boil
4. Cut potatoes in average size cubes, add thyme and salt.
5. Cover, reduce heat and cook for 10-15 minutes.
6. Optional. Fry millet on a small skillet for 5 minutes to bring golden color.
7. Add millet to soup pot and cook for another 25-30 minutes.
8. Add pepper 5 minutes before done Serves 4-6
