Baking with Millet
Millet is very small grain. There are 2 ways baking using millet: using
already cooked viscous millet grain (kasha) or millet flour. Most of the recipes
on this site include kasha as a main ingridient. Also, very important, to use
bread crumbs while cooking to prevent sticking.
Desserts and main meals can be cooked with millet.
Here is an example of one of classic millet baking recipe.
Russian Millet Pie Karavai
Ingredients:
Millet Kasha (4 glasses) - - see how to cook simple millet kasha here
Eggs (3)
Butter (3 tbsp)
Bread Crumbs (about 3-4 tbsp)
Salt (depends on ones taste)
Serves 3-4
Cooking Instructions
1. Separate egg yolks from whites.
2. Let kasha to chill. Add yolks to kasha.
3. Whip egg white well, add to kasha
4. Mix everything very well
5. Oil baking dish or skillet, spread bread crumbs. Add kasha mix.
6. Heat up oven to 330F, place the baking dish in (baking dish or
skillet MUST be oven safe)
7. Bake for 15-20 minutes
